Consuelo Redhorse

Board Member

Consuelo has jumped in as our finance wizard. Bringing some of her bookkeeping skills from her day job, and also lending insights from her role on the local school board. Consuelo has caught the Smart Bellies bug in a hurry -she believes all kids deserve to be happy and emotionally stable and that we can help. She’s a Colorado native, and has lived in Summit County for 10 years with her husband, Jacob, and daughter, Jaxon. She devotes a lot of her spare time to helping our local youth - a Girl Scout leader and Girls on the Run coach - but also loves camping, walking her Newfie (Chewy!), hanging with her cat (Inky!), skiing and rock climbing.

Marci Aerenson

Board Member

Marci found Smart Bellies during the worst of the Covid-19 pandemic.  She found that our packing parties were a great way to connect with others in the community while providing meaningful support to vulnerable children and families.  Marci has served many social services organizations in hands-on and leadership roles.  She is currently a mentor to young people with Mountain Mentors as well as the CMC student mentoring program.  Since leaving a career in commercial lending her passion has been caring for her family and supporting the community, especially the parts of the community with the most critical needs.

Marci brings a background in finance and accounting plus many years of non-profit board experience.  Her strength is as a connector so she quickly took on the role as volunteer coordinator to keep our shifts filled.

She and her husband, Andy, moved to Summit County in 2015 from Delaware. They both find great joy in community involvement as well as all of the outdoor activities to be found in the mountains.  Marci can often be found nordic skiing in the backcountry with her dog, alpine touring, honing her downhill skiing skills on the resort and logging huge miles on her road bike while training for the Triple Bypass ride each summer.  She loves living in Summit County and is passionate about helping Smart Bellies keep the children in our community healthy.

Matt moved to Breckenridge in 2016 with his wife, Erin, and 3 children.  He joined Alpine Bank as a wealth management officer covering Summit, Eagle, and Routt counties.  Before Colorado, Matt and Erin live in Connecticut and both worked in investment banking.  All 3 children play Summit Youth Hockey and are active in 4-H.  The family spends weekends managing Eagle Rock Mercantile in Fairplay and helping out at the family’s ranch in South Park.  Matt graduated from the Ross School of Business at the University of Michigan and grew up in the metro Detroit area.

Matt started volunteering with Smart Bellies through Alpine Bank in the fall of 2019 after learning of the need for these resources in our community.

Mike and his wife Bonnie moved to Summit County in 2018 after 27 years in Minnesota. He was
introduced to Smart Bellies in 2021 by Bonnie, a Smart Bellies volunteer. Since then he has been helping with Friday deliveries. Mike has held several senior level management positions in
his 30+ year career in the international transport, logistics and supply chain software sectors. Mike had a leadership role in developing and managing 2 European Union funded sustainability
projects. These led to his current position as CEO of digi-trust.EU, a spin-off of one of the
projects.

He served as a board member for a community youth sports association in Minnesota where his
responsibilities included finance and capital development projects. He served as a board member on a local government body that focused on improving the environmental quality of
one of Minnesota’s larger lakes.

Mike is an avid skier and takes advantage of Colorado’s many year round outdoor activities.

Sarah Schmidt

Co-Founder

Sarah is one of our Co-Founders. She’s spent her career in nonprofit management, partly at a backpack program in Florida (called Food for Thought - check them out!). In our first few years, Sarah has taken the lead on our development, grant writing and finances. It’s because of Sarah’s steady and spirited belief in feeding kids that we’ve gotten this far - Sarah always says we focus on kids because they can’t always focus on themselves. Sarah grew up in Menasha, WI and lives with her husband (Joseph!), brand new baby boy (August!) and pup (Moose!) in Fairplay, CO. Sarah is a fantastic cook, a big sports fan, and she loves to hike and camp.

*Shout out to her husband, Joe, for helping us get off the ground lending muscle and wisdom every step of the way.

Margaret Sheehe

Co-Founder

Margaret has also been here from the beginning as one of our Co-Founders. Her mom runs the local food cupboard where she is from and she was raised to believe that everyone should have access to consistent food that makes them feel good. Kids especially. Outside of Smart Bellies, she works for OP3, Inc planning walks, runs and bike rides for an assortment of foundations and causes. She has a big family back home in Pennsylvania and currently lives in Colorado with her dog, Harriet. She loves snuggling Sarah’s baby, fly fishing and attempting to garden at high altitude.

David is a founding member and has been around since we were just a few friends packing out of his apartment living room in Breckenridge. He’s been our local guide, a constant head in the game, and is now helping us with our expansion and logistics. Although he got roped in because of his friendship with Sarah and Margaret, David’s come to believe in the spirit of Smart Bellies and loves what it adds to our community. David grew up in Charlottesville, VA and after a stint in Europe moved to Breck for the past 13 years. He’s in event production, construction, teaching and coaching. An avid lacrosse guy, skier (check out summit2ski.com), mountain and road biker, and general adventurer.
